chicken al’expiration date
Coming home tonight the last thing I wanted to do was cook and it was something I was dreading all the way home. I had the sort of day where a server goes down at 17.10, twenty minutes before the end of the day. Anyway I could not avoid the task as I had accidentally defrosted chicken breasts for enchiladas that never happened and had to be used else I would have to throw it out. So I cooked. Along with the chicken I also had peppers, chorizo, tomatoes and cheese that would expire, also mostly part of the aforementioned fajitas. The only other requirement was that it had to be something that required no attention and cooked fast.
The result was chunky chicken breast pieces with peppers and tomatoes, along with a little bit of smoky fajita spices, oregano, garlic,salt and very little extra virgin olive oil. Oh, and the chorizo of course cos noone got hurt from a little bit of smokeyness, all thrown in a roasting pan and cooked for 30 mins, gas mark 6. At the end of the cooking time I covered it with grated mozzarella and once it had melted, turned the oven off and let it stand for 10 mins or so.
A third of this mix was eaten as fajita wrap filling and it was possibly the best non-fajita fajita filling ever. No effort whatsoever, just a quick check towards the end. Perfect comfort food. The rest will be tomorrow’s lunch and some will be frozen.
