The anatomy of a cake

Tonight I made cake. I also took pictures

Chocolate muffin cake layers, coffee and brandy mix to moisten them. A very thin layer of chocolate fudge. Then another layer, thick white chocolate and double cream mousse. Another layer cake. Chocolate fudge to cover the whole cake.

To roll the fondant out, grease a vinyl mat (buy a yard of clear vinyl at walmart and cut it into several mats) with crisco. Roll the fondant out to the size you need. To figure that out, add 8 inches to the diameter of your cake pan, plus an extra inch just in case, as long as your cake is a round, 2 layer cake. Lightly ice the cake with buttercream to provide a cushion for the fondant and to help it stick. When you put the fondant on the cake, first gently open out any pleats or creases that form on the sides or around the bottom edge. Then smooth the top and the sides. When it’s smooth, cut around the bottom edge with a pizza wheel or pastry cutter.
